Main ingredients
  • 4 pieces boneless skinless chicken breasts
  • 1 cup bread crumbs
  • 1 cup grated Parmesan cheese divided
  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Method

Preparation
  1. Preheat your oven to 375°F.
  2. In one dish, mix together the bread crumbs, half the Parmesan, Italian seasoning, salt, and pepper.
  3. In another dish, beat the eggs and milk together until smooth.
  4. Put the flour in a third dish.
  5. Dredge each chicken breast in flour, dip it in the egg mixture, and coat it with the breadcrumb mixture.
  6. Heat the olive oil in a skillet and cook the chicken for 3-4 minutes per side until golden brown.
  7. Transfer the chicken to a baking dish.
  8. In a bowl, mix the remaining Parmesan with mozzarella and garlic, then top the chicken with this mixture.
  9. Bake for 20-25 minutes until cooked through.

Notes

Don’t rush the browning for better crunchiness. You can swap in different cheeses or use panko breadcrumbs for extra texture. Adding crushed red pepper can spice things up!
