Preparation
- Preheat the oven to 200°C (about 400°F).
- Peel the potatoes and cut them into cubes.
- Mix the cubed potatoes with olive oil and spices, then spread them on a baking sheet.
Cooking
- Roast the potatoes for 25-30 minutes, until they’re crispy and golden.
- Meanwhile, cook the ground meat in a skillet, seasoning it with the taco spice blend.
- Once the potatoes are ready, toss them into a bowl. Layer the spiced meat and fresh veggies on top.
- Drizzle with cheese and sour cream if desired, then dig in!
Notes
Leftovers can be stored in the fridge for 4-5 days. For longer storage, freeze components separately for up to 3 months.
