Main ingredients
  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn (canned or frozen)
  • 1 medium avocado, diced
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 wedge lime for serving

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash the sweet potatoes and stab them several times with a fork.
  3. Rub each sweet potato with olive oil, salt, and pepper.
Roasting
  1. Place the sweet potatoes on a baking sheet and roast for about 45-50 minutes, or until they’re tender.
Mixing
  1. In a bowl, mix together the black beans, corn, diced avocado, red onion, and cilantro.
Assembly
  1. Once the sweet potatoes are cooked, remove them from the oven and let them cool for a few minutes.
  2. Slice the sweet potatoes open and fill them with the black bean mixture.
  3. Serve with lime wedges on the side.

Serve with a sprinkle of cilantro and lime wedges. Customize toppings as desired.
