Ingredients
  

Crust
  • 1 cup all-purpose flour
  • 0.5 cup unsalted butter, softened
  • 0.25 cup granulated sugar
Filling
  • 0.5 cup powdered sugar
  • 1 cup rhubarb, diced
  • 0.5 cup lemon juice
  • 2 large eggs
  • 0.25 cup all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9x9 inch baking pan.
  2. In a mixing bowl, combine 1 cup flour, softened butter, and 1/4 cup sugar until crumbly, then press into the bottom of the prepared pan.
  3. Bake for 15 minutes.
Filling
  1. In another bowl, mix the powdered sugar, lemon juice, diced rhubarb, eggs, 1/4 cup flour, baking powder, and salt until well combined.
  2. Pour the mixture over the crust.
  3. Return to the oven and bake for 25-30 minutes or until set.
  4. Let cool before slicing into bars and serving.

Notes

Serve chilled or at room temperature; sprinkle powdered sugar on top for extra elegance. Store bars in an airtight container in the fridge for 5-7 days, or freeze for later use.
