- In a bowl, combine cottage cheese, rolled oats, honey or maple syrup, lemon juice, lemon zest, and vanilla extract. Mix well until combined.
- Gently fold in the fresh blueberries, being careful not to crush them.
- Using your hands or a cookie scoop, form the mixture into small balls or bites.
- Place the protein bites on a parchment-lined baking sheet.
- Refrigerate for at least 30 minutes to set.
Notes
These bites keep well in the fridge for about five days or can be frozen for longer storage. Defrost in the fridge before eating.
