Ingredients
  

For the marinade
  • 1/4 cup lime juice Freshly squeezed for best flavor
  • 1/4 cup orange juice Freshly squeezed for best flavor
  • 1/4 cup pineapple juice Fresh or bottled
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced Toast for better flavor
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the chicken
  • 4 pieces chicken breasts Can substitute with chicken thighs for more juiciness
  • 1/4 cup fresh cilantro, chopped For garnish

Method
 

Preparation
  1. In a bowl, mix lime juice, orange juice, pineapple juice, olive oil, garlic, cumin, salt, and pepper to create the marinade.
  2. Place chicken breasts in a dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Cooking
  1. Preheat the grill to medium-high heat.
  2. Remove the chicken from the marinade and discard the marinade.
  3. Grill the chicken for 6-8 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C).
  4. Garnish with fresh cilantro before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months. Reheat in the microwave or on the grill.
