Ingredients
  

Marinade
  • 1/4 cup lime juice
  • 1/4 cup orange juice
  • 1/4 cup pineapple juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
Chicken
  • 4 pieces boneless, skinless chicken breasts
Garnish
  • to taste fresh cilantro for garnish

Method
 

Preparation
  1. In a bowl, whisk together the lime juice, orange juice, pineapple juice, olive oil, minced garlic, salt, pepper, and paprika to create the marinade.
  2. Place the chicken breasts in a resealable plastic bag and pour the marinade over the chicken. Seal the bag and refrigerate for at least 1 hour or up to overnight.
Cooking
  1. Preheat the grill to medium-high heat.
  2. Remove the chicken from the marinade and discard the marinade.
  3. Grill the chicken for about 6-7 minutes on each side or until fully cooked and the internal temperature reaches 165°F (75°C).
  4. Remove from the grill and let it rest for a few minutes.
  5. Serve garnished with fresh cilantro.

Notes

Timing is key—don’t rush the marinating process for maximum flavor. Add cayenne pepper for a spicy kick, and use fresh herbs for enhanced flavor. Store leftovers in an airtight container for up to 3-4 days or freeze for up to 3 months.
