  • 2 pieces ripe avocados Add just before serving.
  • 1 cup cherry tomatoes, halved For garnish.
For the marinade
  • 2 tablespoons olive oil Extra virgin for more flavor.
  • 2 pieces limes, juiced Provides zest and acidity.
  • 1 teaspoon cumin For warmth and depth.
  • 1 teaspoon paprika For color and flavor.
  • to taste Salt Adjust based on preference.
  • to taste Pepper Adjust based on preference.
For garnish
  • to taste Fresh cilantro Adds freshness.

Method
 

Marinating
  1. In a bowl, mix lime juice, olive oil, cumin, paprika, salt, and pepper to create a delicious marinade.
  2. Add the chicken breasts to the marinade and let them sit for at least 30 minutes.
Grilling
  1. Preheat your grill to medium-high heat.
  2. Grill the chicken for about 6-7 minutes on each side or until fully cooked.
  3. Let the chicken rest for a few minutes before slicing.
Serving
  1. Slice the avocados and prepare the cherry tomatoes.
  2. Serve the grilled chicken topped with avocado slices, fresh tomatoes, and a sprinkle of cilantro.

Notes

For the best flavor, marinate the chicken longer. Store leftovers in the fridge for 3-4 days and consider adding avocados fresh when ready to eat.
