Ingredients
  

For the marinade
  • 1/2 cup balsamic vinegar
  • 1/4 cup olive oil
  • 3 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the chicken
  • 4 pieces boneless, skinless chicken breasts
  • Fresh parsley, chopped (for garnish) Optional, for serving

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together balsamic vinegar, olive oil, honey, minced garlic, oregano, salt, and pepper.
  3. Place chicken breasts in a resealable plastic bag or shallow dish, pour the marinade over, ensuring each piece is well-coated, and seal the bag or cover the dish.
  4. Allow the chicken to marinate in the refrigerator for at least 30 minutes, or up to 2 hours for maximum flavor.
Cooking
  1. Remove the chicken from the marinade and place it in a baking dish. Pour any remaining marinade over the top.
  2. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  3. Once cooked, remove the chicken from the oven and let it rest for 5 minutes to allow the juices to redistribute.
  4. Sprinkle with fresh parsley before serving.

Notes

For best results, flip the chicken halfway through baking and use a meat thermometer for perfectly cooked chicken. Leftovers last 3-4 days in the refrigerator and can be frozen for 2-3 months.
