  • 2 pounds medium-sized chicken breasts (about 7-8 ounces each) Or cut two large chicken breasts in half horizontally
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried mustard
  • 1/2 teaspoon chili powder (optional)
  • 1.5 teaspoons kosher salt Or to taste
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil or avocado oil

Method
 

Preparation
  1. Preheat your oven to 425 degrees Fahrenheit and lightly grease a large baking dish or rimmed baking sheet.
  2. Using a meat pounder or a rolling pin, pound the thickest part of each chicken breast until they are roughly the same thickness throughout.
  3. In a bowl, add the chicken breasts and toss with all the spices and olive or avocado oil until evenly coated.
Cooking
  1. Place the chicken in the baking dish, spacing them apart.
  2. Transfer to the oven and bake for 18-20 minutes, until the internal temperature reaches 165 degrees Fahrenheit.
  3. Allow the chicken to rest for several minutes before slicing.
  4. Brush with pan juices, slice, serve, and enjoy!

Notes

For extra crispiness, broil the chicken for the last minute or two. Adjust spices to taste, and feel free to cut chicken into smaller pieces for quicker baking.
