  • 1 can (15 oz) kidney beans (drained)
  • 1 can (15 oz) black beans (drained)
  • 1 can (15 oz) diced tomatoes
  • 2 tablespoons tomato paste
  • 2 cups beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt (or to taste)
  • 1 tablespoon olive oil

  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Toss in the chopped onion and minced garlic, cooking until they’re soft and fragrant.
  3. Stir in the chopped green and red bell peppers, letting them soften for a few minutes.
  4. Pour in the diced tomatoes and add the tomato paste, mixing them well.
  5. Stir in the kidney beans, black beans, and beef broth.
  6. Sprinkle in the chili powder, cumin, paprika, black pepper, and salt, stirring everything together.
  7. Bring to a simmer and allow to cook for 30-40 minutes, letting all those flavors meld.
  8. Give it a taste, adjust seasoning if needed, and serve hot!

Notes

Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months. Reheat on the stovetop or microwave until piping hot. Customize with toppings like shredded cheese, fresh cilantro, sour cream, or crushed tortilla chips.
