Ingredients
  

Dry Ingredients
  • 2 cups gluten-free all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened
  • 1 cup milk Can use almond or soy milk for a vegan option.
  • 3 large eggs Can replace with flaxseed meal for a vegan option.
  • 1 teaspoon vanilla extract
Jam
  • 1 cup of your favorite jam (strawberry, raspberry, or apricot) Choose thick jam for better swirls.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together gluten-free flour, sugar, baking powder, and salt.
  3. In another bowl, beat together the butter, milk, eggs, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry mixture, mixing until just combined.
Assembly
  1. Pour half of the batter into the prepared loaf pan.
  2. Spread half of the jam over the batter, then add the remaining batter on top.
  3. Swirl the rest of the jam into the top layer of the batter with a knife.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For best results, use room temperature ingredients and keep the jams thick for swirls. Store in the fridge for 3-5 days or freeze for up to three months.
