Preparation
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, whisk together gluten-free flour, sugar, baking powder, and salt.
- In another bowl, beat together the butter, milk, eggs, and vanilla extract until well combined.
- Gradually add the wet ingredients to the dry mixture, mixing until just combined.
Assembly
- Pour half of the batter into the prepared loaf pan.
- Spread half of the jam over the batter, then add the remaining batter on top.
- Swirl the rest of the jam into the top layer of the batter with a knife.
Baking
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For best results, use room temperature ingredients and keep the jams thick for swirls. Store in the fridge for 3-5 days or freeze for up to three months.
