  • 1 lb Italian sausage
  • 2 pieces bell peppers (red and green), sliced
  • 1 piece onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the Italian sausage over medium heat until browned.
  3. Add the sliced bell peppers, onion, and garlic to the skillet. Sauté until the vegetables are tender.
  4. Stir in the diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper.
  5. Transfer the mixture to a casserole dish and top with shredded mozzarella cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  7. Let it cool for a few minutes before serving.

Notes

This dish can be served with garlic bread, fresh greens, or over pasta. Leftovers keep well in the fridge for 3-4 days and can be frozen for up to 3 months.
