Preparation
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the Italian sausage over medium heat until browned.
- Add the sliced bell peppers, onion, and garlic to the skillet. Sauté until the vegetables are tender.
- Stir in the diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper.
- Transfer the mixture to a casserole dish and top with shredded mozzarella cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
This dish can be served with garlic bread, fresh greens, or over pasta. Leftovers keep well in the fridge for 3-4 days and can be frozen for up to 3 months.
