Preparation
- In a large bowl, combine warm water, sugar, and yeast. Let it sit for 5 minutes until foamy.
- Add olive oil, 3 cups of flour, and salt. Mix until a shaggy dough forms.
- Knead on a floured surface for 6-8 minutes until smooth and elastic, adding remaining flour as needed.
- Place dough in an oiled bowl, cover, and let rise for 1 hour until doubled in size.
Making the Filling
- Meanwhile, mix softened butter with minced garlic and dried herbs.
Assembling the Loaf
- Roll dough into a 12x18 inch rectangle, spread with herb butter, and sprinkle with cheeses and parsley.
- Roll tightly from the long side, pinch seam to seal, and place in a greased 9x5-inch loaf pan.
- Let rise another 30-45 minutes.
Baking
- Bake in a preheated 375°F oven for 30-35 minutes until golden brown and hollow-sounding when tapped.
