Method
Preparation
- In a large bowl, combine warm water and yeast; let it sit for 5 minutes until foamy.
- Add flour, salt, and olive oil to the yeast mixture; stir until a dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover, and let it rise in a warm place until doubled in size, about 1 hour.
Baking
- Preheat your oven to 425°F (220°C).
- Punch down the risen dough and transfer it to a greased baking sheet; use your fingers to stretch and flatten the dough.
- In a small bowl, mix together the garlic, rosemary, and a bit of olive oil; drizzle over the top of the dough.
- Make dimples in the surface with your fingers, then sprinkle with sea salt.
- Let rise for another 20 minutes.
- Bake for 20-25 minutes until golden brown.
- Let cool slightly before serving.
Notes
Best enjoyed fresh. Leftovers can be stored for about 3 days at room temperature or a week in the fridge. For freezing, wrap slices tightly and keep for up to a month. Reheat in the oven for best results.
