For the Bruschetta
  • 1 French baguette 1 French baguette, sliced into 1/2 inch thick pieces
  • 2 large 2 large ripe tomatoes, diced Make sure they are ripe for maximum flavor.
  • 1 cup 1 cup fresh mozzarella, diced Fresh mozzarella adds creaminess.
  • 1/4 cup 1/4 cup fresh basil leaves, chopped Fresh basil enhances the flavor.
  • 2 cloves 2 cloves garlic, minced
  • 2 tablespoons 2 tablespoons extra-virgin olive oil, plus more for brushing Use high-quality olive oil for best results.
  • 1 tablespoon 1 tablespoon balsamic vinegar For a tangy flavor.
  • Salt and freshly ground black pepper, to taste

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper. Lay the sliced baguette pieces in a single layer on the sheet.
  3. Brush each slice of bread lightly with olive oil, ensuring even coverage.
  4. Place the baking sheet in the oven and toast the bread for about 5-7 minutes, or until golden and crispy. Remove from oven and set aside.
Mixing Toppings
  1. In a large bowl, combine the diced tomatoes, mozzarella, and basil.
  2. Add the minced garlic, 2 tablespoons of olive oil, and balsamic vinegar to the bowl. Stir gently to combine.
  3. Season the mixture with salt and freshly ground black pepper to taste.
  4. Allow the mixture to sit for about 10 minutes at room temperature, letting the flavors meld.
Assembly
  1. Spoon a generous amount of the tomato-mozzarella topping onto each toasted baguette slice.
  2. Drizzle a little more olive oil on top if desired.
  3. Serve immediately and enjoy the burst of Italian flavors.

Notes

Best enjoyed fresh. Store toppings in an airtight container for up to 2 days. Toast baguette fresh before serving for ideal crunch.
