Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the gluten-free flour, baking soda, and salt.
- In another bowl, cream together the softened butter and sugar until light and fluffy.
- Add the egg, vanilla extract, and almond extract (if using) to the butter mixture and mix until combined.
- Gradually add the flour mixture to the wet ingredients, mixing until a dough forms.
- Scoop tablespoon-sized amounts of dough onto a baking sheet lined with parchment paper, spacing them a couple of inches apart.
- Flatten each ball slightly with the bottom of a glass.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
Notes
Perfect for sharing and can be served with powdered sugar dust or melted chocolate drizzle. Store in an airtight container for up to a week or freeze for up to three months.
