Ingredients
  

Dry Ingredients
  • 1 ¾ cups gluten-free all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
Wet Ingredients
  • ½ cup unsalted butter, softened Chill the dough for at least 30 minutes for better shapes.
  • 1 cup granulated sugar
  • 1 large egg Can be substituted with a flax egg for a vegan option.
  • 1 teaspoon vanilla extract
  • ¼ teaspoon almond extract (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the gluten-free flour, baking soda, and salt.
  3. In another bowl, cream together the softened butter and sugar until light and fluffy.
  4. Add the egg, vanilla extract, and almond extract (if using) to the butter mixture and mix until combined.
  5. Gradually add the flour mixture to the wet ingredients, mixing until a dough forms.
  6. Scoop tablespoon-sized amounts of dough onto a baking sheet lined with parchment paper, spacing them a couple of inches apart.
  7. Flatten each ball slightly with the bottom of a glass.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Allow to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Notes

Perfect for sharing and can be served with powdered sugar dust or melted chocolate drizzle. Store in an airtight container for up to a week or freeze for up to three months.
