Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk the egg whites until stiff peaks form. Set aside.
- In another bowl, beat the egg yolks with the sugar until creamy and pale.
- Add the vanilla extract and combine.
- Gently fold in the almond flour, cornstarch, baking powder, and salt until smooth.
- Carefully fold in your egg whites until just combined.
- Mix in the diced apples and spoon the batter into a greased cake pan.
- Sprinkle the sliced almonds and turbinado sugar on top.
Baking
- Bake for about 30–35 minutes, or until golden brown and a toothpick comes out clean.
- Let it cool before serving.
Notes
Store in an airtight container in the fridge for about 4-5 days or freeze for up to a month. Reheat individual slices in the microwave.
