  • 3 large large eggs, separated
  • 0.5 cup granulated sugar
  • 2 tsp vanilla extract (or 1 tsp vanilla plus 1 tsp almond extract)
  • 1.5 cups blanched almond flour
  • 2 tbsp cornstarch (or coconut flour)
  • 1 tsp baking powder
  • 0.25 tsp salt
  • 3 cups peeled, diced apples
  • 0.25 cup sliced almonds
  • 1 tbsp turbinado sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk the egg whites until stiff peaks form. Set aside.
  3. In another bowl, beat the egg yolks with the sugar until creamy and pale.
  4. Add the vanilla extract and combine.
  5. Gently fold in the almond flour, cornstarch, baking powder, and salt until smooth.
  6. Carefully fold in your egg whites until just combined.
  7. Mix in the diced apples and spoon the batter into a greased cake pan.
  8. Sprinkle the sliced almonds and turbinado sugar on top.
Baking
  1. Bake for about 30–35 minutes, or until golden brown and a toothpick comes out clean.
  2. Let it cool before serving.

Notes

Store in an airtight container in the fridge for about 4-5 days or freeze for up to a month. Reheat individual slices in the microwave.
