Preparation
- In a bowl, whisk together pineapple juice, soy sauce, brown sugar, ginger, garlic, and olive oil.
- Place the chicken in a resealable bag or a shallow dish and pour the marinade over it. Seal or cover and refrigerate for at least 1 hour, ideally overnight for maximum flavor.
- Preheat the grill to medium heat.
- Remove chicken from the marinade and discard the marinade.
- Season the chicken with salt and pepper.
Cooking
- Grill the chicken for about 6-7 minutes per side or until fully cooked and juices run clear.
- Remove from the grill and let rest for a few minutes before serving.
Notes
For extra smoky flavor, consider adding smoked paprika to the seasoning. Marinade for at least 2 hours, ideally overnight for enhanced flavor. Grill over high heat for superior grill marks. This recipe can be adapted to use tofu or seitan for a plant-based option.
