  • 4 pieces chicken thighs or breasts
  • 1 cup pineapple juice
  • 1/4 cup soy sauce can substitute with gluten-free soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon ginger, grated
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Method
 

Preparation
  1. In a bowl, whisk together pineapple juice, soy sauce, brown sugar, ginger, garlic, and olive oil.
  2. Place the chicken in a resealable bag or a shallow dish and pour the marinade over it. Seal or cover and refrigerate for at least 1 hour, ideally overnight for maximum flavor.
  3. Preheat the grill to medium heat.
  4. Remove chicken from the marinade and discard the marinade.
  5. Season the chicken with salt and pepper.
Cooking
  1. Grill the chicken for about 6-7 minutes per side or until fully cooked and juices run clear.
  2. Remove from the grill and let rest for a few minutes before serving.

Notes

For extra smoky flavor, consider adding smoked paprika to the seasoning. Marinade for at least 2 hours, ideally overnight for enhanced flavor. Grill over high heat for superior grill marks. This recipe can be adapted to use tofu or seitan for a plant-based option.
