Ingredients
  

For the biscuits
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, chilled and cubed
  • 3/4 cup buttermilk
For the chicken
  • 1 pound chicken thighs, boneless and skinless
  • 1 cup buttermilk (for marinating)
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper, to taste
  • Vegetable oil, for frying
For the hot honey
  • 1/2 cup honey
  • 1-2 tablespoons hot sauce (to taste)

Method
 

Preparation of Biscuits
  1. In a bowl, combine flour, baking powder, baking soda, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in buttermilk until just combined.
  2. Turn the dough onto a floured surface and knead gently. Roll out to 1-inch thickness and cut into rounds.
Baking Biscuits
  1. Preheat the oven to 425°F (220°C) and place biscuits on a baking sheet. Bake for 12-15 minutes until golden.
Preparation of Chicken
  1. Marinate chicken in buttermilk, paprika, cayenne, salt, and pepper for at least 30 minutes.
  2. Heat oil in a deep fryer or heavy pot. Fry chicken until golden and cooked through (about 5-7 minutes per side).
Making the Hot Honey
  1. For the hot honey, mix honey with hot sauce in a small bowl.
Assembly
  1. Assemble the dish by placing fried chicken on a biscuit and drizzling with hot honey before serving.

Notes

Use buttermilk for marinating chicken for tenderness. Experiment with different hot sauces for varying heat levels. Store leftovers in the fridge for 3-4 days or freeze for up to 3 months.
