  • 2 pounds carrots Peeled and cut into 2-inch pieces
  • 3 Tablespoons unsalted butter (melted)
  • 2 Tablespoons harissa paste
  • 2 Tablespoons honey
  • 1.5 teaspoons apple cider vinegar
  • 1 teaspoon kosher salt
  • Fresh parsley (for garnish)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Peel the carrots and slice them into 2-inch pieces.
  3. In a bowl, whisk together the melted butter, harissa paste, honey, apple cider vinegar, and kosher salt.
  4. Toss the carrots in the bowl until they’re well-coated with the spice mixture.
  5. Spread the carrots in a single layer on a baking sheet or in a large baking dish.
Cooking
  1. Bake for 25 minutes until the carrots start to brown and are fork-tender, tossing halfway through for even cooking.
  2. Serve with a sprinkle of fresh parsley on top.

Notes

These carrots will keep in the fridge for about 3–5 days. Store in an airtight container and reheat in the oven to maintain crispiness. They can also be frozen for up to three months.
