  2. Peel and dice the sweet potatoes into bite-sized pieces for even cooking.
  3. In a bowl, combine honey, minced garlic, salt, pepper, and paprika.
  4. Toss in the sausages and sweet potatoes, coating them in the honey garlic mixture.
  5. Spread them on a sheet pan, allowing space between pieces.
  6. Drizzle with olive oil and toss again.
  7. Roast for 25-30 minutes, stirring halfway, until sweet potatoes are tender and sausages are cooked through.
  8. Garnish with fresh herbs and serve hot.
