Ingredients
  

For the Chicken
  • 2 pieces boneless, skinless chicken breasts
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 2 tablespoons olive oil For cooking the chicken
For the Sweet Potatoes
  • 2 pieces sweet potatoes, peeled and cubed
  • salt and pepper to taste
  • fresh parsley for garnish (optional)

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix honey, garlic, soy sauce, and a pinch of salt and pepper to create the sauce.
Cooking the Chicken
  1. In a large skillet, heat olive oil over medium heat.
  2. Add the chicken breasts and cook until golden brown on both sides, about 5-7 minutes per side.
  3. Pour the honey garlic sauce over the chicken and let it simmer for a few minutes until the chicken is cooked through.
Roasting the Sweet Potatoes
  1. In a separate baking dish, toss the cubed sweet potatoes with olive oil, salt, and pepper.
  2. Roast the sweet potatoes in the oven for about 25-30 minutes, or until tender.
Serving
  1. Serve the chicken with roasted sweet potatoes and garnish with parsley if desired.

Notes

You can marinate the chicken in the sauce for more flavor. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
