  • 6 pieces chicken thighs, bone-in, skin-on
  • 0.5 cup honey
  • 5 cloves garlic, minced
  • 0.25 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon ground ginger
  • to taste Salt and pepper
  • Chopped green onions, for garnish (optional)
  • Sesame seeds, for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix honey, minced garlic, soy sauce, rice vinegar, sesame oil, and ground ginger until well combined.
  3. Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.
  4. Place the chicken thighs in a resealable bag or shallow dish, pour the marinade over them, and let marinate for at least 15 minutes (or up to 2 hours).
Cooking
  1. Heat a large oven-safe skillet over medium-high heat, add the chicken thighs skin-side down, and sear for about 5-7 minutes until golden brown.
  2. Flip the chicken pieces, pour the remaining marinade into the skillet, and transfer it to the preheated oven.
  3. Bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  4. Baste the chicken with the sauce halfway through cooking.
  5. Remove the chicken from the oven and let it rest for 5 minutes before serving.
  6. Optionally, sprinkle with chopped green onions and sesame seeds for garnish.

Notes

Marinate longer for enhanced flavor. For crispier skin, broil for a minute after baking. Add a pinch of cayenne pepper for a spicy kick. To make this dish vegan, substitute chicken with tofu or tempeh, and press well to remove excess moisture.
