Preparation
- Preheat your oven to 400°F (200°C).
- In a bowl, mix honey, minced garlic, soy sauce, rice vinegar, sesame oil, and ground ginger until well combined.
- Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.
- Place the chicken thighs in a resealable bag or shallow dish, pour the marinade over them, and let marinate for at least 15 minutes (or up to 2 hours).
Cooking
- Heat a large oven-safe skillet over medium-high heat, add the chicken thighs skin-side down, and sear for about 5-7 minutes until golden brown.
- Flip the chicken pieces, pour the remaining marinade into the skillet, and transfer it to the preheated oven.
- Bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Baste the chicken with the sauce halfway through cooking.
- Remove the chicken from the oven and let it rest for 5 minutes before serving.
- Optionally, sprinkle with chopped green onions and sesame seeds for garnish.
Notes
Marinate longer for enhanced flavor. For crispier skin, broil for a minute after baking. Add a pinch of cayenne pepper for a spicy kick. To make this dish vegan, substitute chicken with tofu or tempeh, and press well to remove excess moisture.
