Preparation
- Add chicken breast cubes to a bowl, then toss with cornstarch, salt, and pepper until coated evenly.
- Heat olive oil and butter in a skillet over medium-high heat.
Cooking
- Add chicken cubes in a single layer and cook for 6-8 minutes, turning until golden and cooked through.
- Once cooked, reduce heat and add minced garlic. Stir for 30 seconds.
- Pour in honey, chicken stock, lemon juice, and hot sauce if using. Stir to coat.
- Simmer for 2-3 minutes until the sauce thickens and clings to the chicken.
- Remove from heat, garnish with parsley and chili flakes, and serve hot over rice or noodles.
Notes
These bites can be stored in the fridge for up to 3 days or frozen for up to 2 months. Reheat with a splash of water to keep moist. For a vegan option, substitute chicken with tofu or chickpeas.
