  • 1 lb boneless, skinless chicken breast, cut into 1-inch cubes
  • 2 teaspoons cornstarch (optional) For extra crunch

  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 4 cloves garlic, finely minced
  • 1/4 cup honey
  • 3 tablespoons low-sodium chicken stock
  • 1-2 tablespoons lemon juice
  • 1 teaspoon hot sauce (optional, Sriracha recommended)
  • 1 teaspoon red chili pepper flakes (for garnish)
  • 1 tablespoon chopped fresh parsley (for garnish)

Method
 

Preparation
  1. Add chicken breast cubes to a bowl, then toss with cornstarch, salt, and pepper until coated evenly.
  2. Heat olive oil and butter in a skillet over medium-high heat.
Cooking
  1. Add chicken cubes in a single layer and cook for 6-8 minutes, turning until golden and cooked through.
  2. Once cooked, reduce heat and add minced garlic. Stir for 30 seconds.
  3. Pour in honey, chicken stock, lemon juice, and hot sauce if using. Stir to coat.
  4. Simmer for 2-3 minutes until the sauce thickens and clings to the chicken.
  5. Remove from heat, garnish with parsley and chili flakes, and serve hot over rice or noodles.

Notes

These bites can be stored in the fridge for up to 3 days or frozen for up to 2 months. Reheat with a splash of water to keep moist. For a vegan option, substitute chicken with tofu or chickpeas.
