Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
For the Roasted Sweet Potatoes
  • 2 large sweet potatoes, peeled and cubed
For the Green Beans
  • 1 pound green beans, trimmed

Method
 

Preparation
  1. In a small bowl, whisk together the honey, soy sauce, minced garlic, olive oil, paprika, thyme, salt, and black pepper until well combined.
  2. Place chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Ensure chicken is well coated and marinate for at least 30 minutes or up to 8 hours in the refrigerator.
  3. Preheat your oven to 400°F (200°C).
  4. Spread the cubed sweet potatoes on a lined baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat.
Cooking
  1. Bake the sweet potatoes in the preheated oven for about 15 minutes until they start to soften.
  2. Remove the baking sheet from the oven, push the sweet potatoes to one side, and place marinated chicken breasts on the other side. Arrange trimmed green beans around the chicken. Drizzle with remaining marinade.
  3. Return to the oven and bake for an additional 20-25 minutes until chicken reaches an internal temperature of 165°F, and sweet potatoes are fully tender.
  4. Let the meal rest for a few minutes before serving.

Notes

For optimal flavor, consider marinating the chicken overnight. You can add slivered almonds or walnuts for extra texture. Cooking in a foil packet can help retain moisture.
