Honey BBQ Chicken Rice

Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)
  • Chopped green onions for garnish

Method
 

Preparation
  1. Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat a skillet over medium heat and sear the chicken for 3–4 minutes per side until golden brown. Remove the chicken and set aside.
  3. In a bowl, mix together BBQ sauce, honey, soy sauce, and minced garlic.
  4. In the same pan, toast the uncooked rice for 1–2 minutes.
Cooking
  1. Add chicken broth and half of the sauce mixture. Stir to combine.
  2. Return the chicken to the pan and pour the remaining sauce over the top.
  3. Cover and simmer on low heat for 15 minutes.
  4. Add the mixed vegetables, cover, and cook for 5 more minutes or until the rice is tender and chicken is cooked through.
  5. Let sit for 5 minutes. Garnish with green onions and serve hot.

Notes

Store leftovers in an airtight container in the fridge for about 3–4 days or freeze in portions for up to 3 months. Reheat in the microwave or stovetop.
