- Preheat your oven to 400°F (200°C).
- In a large bowl, combine diced potatoes with olive oil, garlic powder, paprika, salt, and pepper. Toss to coat.
- Place the chicken breasts in the center of a large baking dish and surround them with the seasoned potatoes.
- Brush the chicken with the honey BBQ sauce, making sure to coat it evenly.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the potatoes are golden and tender.
- Remove from the oven and let it rest for a few minutes.
- Garnish with fresh parsley before serving. Enjoy!
