  • 1 teaspoon fennel seeds
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon crushed red pepper flakes
  • 1 teaspoon dried rosemary
  • 1 tablespoon chopped fresh parsley Can swap for basil or cilantro
  • Salt to taste

Method
 

Preparation
  1. In a large bowl, combine the ground pork and all the spices: fennel, oregano, black pepper, crushed red pepper, rosemary, parsley, and salt.
  2. Mix the ingredients thoroughly until well incorporated.
  3. Shape the mixture into patties or stuff it into casings if you’re feeling adventurous.
Cooking
  1. Cook the sausage on a grill, in a skillet, or bake in the oven until fully cooked.
  2. Let the mixture chill in the fridge for an hour before cooking for enhanced flavor.

Notes

Store homemade sausages in the fridge for about 3-5 days or freeze them for up to 2-3 months. Reheat them on a skillet over medium heat until warmed through.
