  • 1 tbsp olive oil (extra virgin)
  • 1 yellow onion (diced)
  • 4 cloves garlic (minced)
  • 1 pound ground beef
  • 4 cups beef broth (low sodium)
  • 3 tbsp tomato paste
  • 1 tbsp coconut aminos
  • 1 tbsp dijon mustard
  • 1 tsp chili powder
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1 tsp salt (adjust if needed)
  • 1/4 tsp ground black pepper
  • 2 tbsp all-purpose gluten-free flour (optional for thickening)
  • 12 oz gluten-free pasta

Method
 

Cooking
  1. Heat a Dutch oven or large pan over medium heat with olive oil.
  2. Add the diced onions and minced garlic. Sauté for about 3–5 minutes, until fragrant and onions become translucent.
  3. Toss in the ground beef and cook until it’s no longer pink.
  4. Add everything else except for the flour and pasta. Stir well and bring to a low simmer.
  5. Sprinkle flour into the pot and whisk to combine.
  6. Add pasta and bring back to a simmer. Cook uncovered for about 10-12 minutes or until pasta is tender, stirring occasionally.
  7. Serve topped with shredded cheddar cheese if desired, or enjoy as is. Sprinkle red pepper flakes for an extra kick.

Notes

Store in the fridge for about 3–4 days in an airtight container. Can freeze for up to 3 months!
