  • 1 pound ground beef You can substitute with lentils or extra beans for a vegetarian version.
  • 1 whole onion, diced
  • 1 can kidney beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 can tomato puree
  • 2 tablespoons chili powder Adjust based on your spice preference.
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add the diced onion and cook until softened.
  3. Stir in the kidney beans, diced tomatoes, tomato puree, and chili powder.
  4. Season with salt and pepper.
  5. Bring the mixture to a boil, then reduce heat and let simmer for 20-30 minutes, stirring occasionally.
Serving
  1. Serve hot in a bowl, topped with grated cheese, sour cream, or fresh cilantro. Serve with crusty bread, tortilla chips, or over rice.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. It can also be frozen for up to 3 months. For added flavor, consider adding bell peppers or jalapeƱos.
