  • 2 cups shredded chicken Use rotisserie chicken for convenience.
  • 1 cup diced carrots Fresh or frozen carrots can be used.
  • 1 cup diced celery
  • 1 cup diced onions
  • 1 cup ditalini pasta
  • 4 cups chicken broth
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon pepper Adjust to taste.
  • 1 teaspoon dried thyme
  • 1 tablespoon olive oil For sautéing.

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onions, carrots, and celery; sauté until softened.
  3. Pour in the chicken broth and bring to a boil.
  4. Stir in the ditalini pasta, shredded chicken, salt, pepper, and thyme.
  5. Reduce heat and simmer for about 10-12 minutes, until the pasta is cooked.
  6. Serve warm and enjoy that cozy feeling!

Notes

This soup keeps well in the fridge for 3-4 days and can be frozen for up to 3 months. Reheat and add a splash of broth if necessary. Add veggies like peas or spinach for extra color.
