  • 8 oz pasta
  • 1 lb ground turkey or beef
  • 1 packet taco seasoning
  • 1 can black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 cup cheddar cheese, shredded
  • 1 cup chicken or vegetable broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Method
 

Preparation
  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the ground turkey or beef and cook until browned.
  3. Stir in the taco seasoning, black beans, corn, diced tomatoes, and broth. Bring to a simmer.
  4. Add the cooked pasta to the skillet and stir to combine.
  5. Reduce heat and top with shredded cheddar cheese. Cover the skillet until the cheese is melted.
  6. Season with salt and pepper to taste.
  7. Serve hot.

Notes

For extra flavor, add some diced jalapeƱos while cooking the meat or drizzle buffalo sauce on top before serving. Store leftovers in the fridge for up to 3-4 days, or freeze for 2-3 months.
