Preparation
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the ground turkey or beef and cook until browned.
- Stir in the taco seasoning, black beans, corn, diced tomatoes, and broth. Bring to a simmer.
- Add the cooked pasta to the skillet and stir to combine.
- Reduce heat and top with shredded cheddar cheese. Cover the skillet until the cheese is melted.
- Season with salt and pepper to taste.
- Serve hot.
Notes
For extra flavor, add some diced jalapeƱos while cooking the meat or drizzle buffalo sauce on top before serving. Store leftovers in the fridge for up to 3-4 days, or freeze for 2-3 months.
