Ingredients

For the marinade
  • 3 tablespoons gochujang Korean chili paste
  • 2 tablespoons honey Can be substituted with agave syrup for a vegan option
  • 2 tablespoons soy sauce Use tamari for gluten-free
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • to taste Salt and pepper
For garnish
  • Green onions, chopped Optional garnish
  • Sesame seeds Optional garnish
Main ingredients
  • 2 lbs chicken breasts Skinless, boneless

Method

Preparation
  1. In a medium bowl, whisk together the gochujang, honey, soy sauce, sesame oil, minced garlic, and grated ginger until well combined.
  2. Place the chicken breasts in a resealable plastic bag or a shallow bowl. Pour the marinade over the chicken, ensuring it is well coated. Seal the bag or cover the bowl with plastic wrap.
  3. Allow the chicken to marinate in the refrigerator for at least 30 minutes, or overnight for maximum flavor.
Cooking
  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper. Take the marinated chicken out of the refrigerator and place the chicken breasts on the prepared sheet. Discard any remaining marinade.
  3. Bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  4. Once cooked, remove the chicken from the oven and let it rest for a few minutes. Then, slice it into strips or serve whole.
Garnish and Serve
  1. If desired, garnish with freshly chopped green onions and sesame seeds before serving.
  2. Serve the chicken with rice or a side of steamed vegetables.

Notes

For a quicker marinade, consider using store-bought teriyaki sauce mixed with gochujang. This recipe can also be grilled outdoors for a smoky flavor.
