Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Toss the sweet potato cubes with avocado oil, garlic powder, onion powder, smoked paprika, cinnamon, kosher salt, and black pepper.
  3. Spread them out on a baking sheet and roast for about 25-30 minutes, or until tender and golden.
Cooking the Beef
  1. While the sweet potatoes roast, heat 1 tablespoon of avocado oil in a large skillet over medium heat.
  2. Add minced garlic and onion; sauté until fragrant and translucent.
  3. Then, add the ground beef, taco seasoning, cumin, kosher salt, and black pepper.
  4. Cook until the beef is browned, about 8-10 minutes.
Making the Hot Honey Drizzle
  1. In a small saucepan, combine honey, hot sauce, red pepper flakes, and butter.
  2. Stir over low heat until melted and glossy.
Assembly
  1. In bowls, layer the roasted sweet potatoes, ground beef, and a generous scoop of cottage cheese.
  2. Drizzle the hot honey mixture on top, add avocado slices, sprinkle cilantro, and serve with lime wedges.
