Ingredients
  

For the Chicken
  • 800 g Chicken Breast (cut into halves)
  • 1.5 Tsp Cajun Seasoning Mix For marinating the chicken
  • 2 Tsp Olive Oil
  • 25 g Grass-Fed Butter for Cooking
For the Rice and Sauce
  • 1 Medium Red Onion (chopped)
  • 4-5 Cloves Garlic (chopped)
  • 1/2 Tsp Cajun Seasoning Mix (for the rice)
  • 250 ml Milk
  • 150 g Light Cream Cheese
  • 40 g Parmesan
  • 15 g Grass-Fed Butter
  • Fresh Parsley (for garnish)
Spices
  • 1 Tsp Salt
  • 1 Tsp Black Pepper
  • 1 Tsp Garlic Powder
  • 1 Tsp Onion Powder
  • 1 Tsp Oregano
  • 1 Tsp Thyme
  • 1 Tsp Paprika
  • 1 Tsp Chili Powder

Method
 

Preparation
  1. Coat the chicken breast pieces in the Cajun seasoning mix and olive oil. Let them marinate in an airtight glass container overnight for the best flavor.
Cooking
  1. Heat a pan over medium-high heat and melt the grass-fed butter. Cook the marinated chicken until it gets a crispy, golden crust. Then, let it rest for a bit before slicing it into strips.
  2. In the same pan, sauté the chopped red onion and garlic until they smell divine. Toss in the remaining Cajun seasoning mix, then add in the day-old rice and stir until well coated.
  3. Lower the heat, melt the butter, and slowly whisk in the milk until warmed. Now, stir in the light cream cheese and Parmesan until you achieve that luscious, creamy sauce.
Assembly
  1. Layer the Cajun rice on a plate, top with your sliced chicken, and drizzle that creamy sauce over everything. Don’t forget the fresh parsley for that finishing touch!
