  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
Sauce Ingredients
  • 1 can diced tomatoes (15 oz, with juices)
  • 1 cup low-sodium beef broth
  • 1/2 cup plain Greek yogurt
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp Italian seasoning
  • to taste Salt and pepper

  • Fresh basil or parsley for garnish

Method
 

Preparation
  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the onion and garlic; sauté until fragrant.
Cooking
  1. Toss in the ground beef and cook until browned.
  2. Stir in the diced tomatoes, beef broth, Greek yogurt, Parmesan cheese, Italian seasoning, and salt and pepper. Let it simmer for a few minutes.
  3. Add the cooked pasta to the skillet with the beef mixture. Toss until well combined.
Serving
  1. Serve the creamy beef pasta garnished with fresh basil or parsley.

Notes

This dish keeps well in the fridge for 3-4 days. Consider swapping ground turkey or chicken for a lighter option, or substituting Greek yogurt with a plant-based alternative for a dairy-free version.
