  • 1 piece low-carb tortilla
  • 1/2 cup cooked chicken, shredded Use leftover roast chicken for convenience.
  • 2 tablespoons Greek yogurt
  • 2 pieces Laughing Cow cheese wedges Adds creaminess to the quesadilla.
  • 1 tablespoon ranch seasoning
  • as needed spray or oil Oil or cooking spray for frying Use to prevent sticking in the skillet.

Method
 

Preparation
  1. In a bowl, mix the shredded chicken with the Greek yogurt and ranch seasoning.
  2. Spread the mixture onto one half of the low-carb tortilla.
  3. Place the Laughing Cow cheese wedges on top of the mixture, then fold the tortilla over.
Cooking
  1. Heat a skillet over medium heat and add a little oil or cooking spray.
  2. Cook the quesadilla for about 3-4 minutes on each side until golden brown and the cheese has melted.
  3. Slice and serve hot.

Notes

Store leftovers in an airtight container in the fridge for about 3 days. For longer storage, freeze for up to a month. Reheat in the microwave or skillet for best texture.
