Preparation
- In a bowl, mix the shredded chicken with the Greek yogurt and ranch seasoning.
- Spread the mixture onto one half of the low-carb tortilla.
- Place the Laughing Cow cheese wedges on top of the mixture, then fold the tortilla over.
Cooking
- Heat a skillet over medium heat and add a little oil or cooking spray.
- Cook the quesadilla for about 3-4 minutes on each side until golden brown and the cheese has melted.
- Slice and serve hot.
Notes
Store leftovers in an airtight container in the fridge for about 3 days. For longer storage, freeze for up to a month. Reheat in the microwave or skillet for best texture.
