  • 2 cups cooked and shredded chicken Use rotisserie chicken for faster prep.
  • 1 cup marinara sauce
  • 1 cup ricotta cheese Can substitute cottage cheese.
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • to taste Salt and pepper Don't skip on the seasoning!
  • 1 cup whole wheat breadcrumbs Toast lightly for a crunchier topping.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine cooked shredded chicken, marinara sauce, ricotta, basil, oregano, salt, and pepper. Stir until well combined.
  3. Transfer the mixture into a greased baking dish.
  4. Sprinkle the shredded mozzarella and grated Parmesan cheese on top.
  5. Evenly distribute the whole wheat breadcrumbs over the cheese layer.
Baking
  1. Bake in the preheated oven for about 25-30 minutes, or until the top is golden and bubbly.
  2. Allow to cool for a few minutes before serving.

Notes

Serve hot with a fresh garden salad and garlic bread. Leftovers can be stored in the fridge for 3-4 days or frozen for later.
