- Air fry the chicken breast at 400°F for 10–12 minutes until fully cooked. Chop into bite-sized pieces and set aside.
- In a small bowl, stir together the cottage cheese and Ranch dressing until smooth.
- In your serving dish, add the cottage cheese mixture and top with the chopped chicken.
- Drizzle with BBQ sauce and sprinkle shredded cheddar cheese on top.
- Microwave the dish for 60 seconds, stir, and enjoy your meal!
Notes
Cook the chicken in bulk for quick meals. Substitute cottage cheese with Greek yogurt for different flavors. Add extra veggies or mix in black beans for more nutrition. Make ahead and store in the fridge for up to 3-4 days.
