  • 4 pieces chicken breasts Flattened to even thickness
  • 1 cup ricotta cheese
  • 1/4 cup fresh herbs (parsley, basil, or thyme) Chopped
  • 1 cup shredded mozzarella cheese
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil For searing

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together ricotta cheese, fresh herbs, mozzarella cheese, garlic powder, salt, and pepper.
  3. Lay the chicken breasts flat and pound them to an even thickness.
  4. Spread the ricotta mixture evenly over each chicken breast.
  5. Roll up the chicken breasts tightly and secure with toothpicks if necessary.
Cooking
  1. Heat olive oil in a skillet over medium heat and sear the chicken rolls on all sides until golden.
  2. Transfer the rolls to a baking dish and bake for 20-25 minutes or until the chicken is cooked through.
  3. Serve with a side of your favorite vegetables.

Notes

Use a meat mallet to pound the chicken evenly for even cooking. Consider different herbs for a unique twist. Don’t overstuff, and sprinkle parmesan on top for a crust. For a spicy kick, add red pepper flakes.
