Preparation
- Preheat the oven to 375°F (190°C).
- In a bowl, mix together ricotta cheese, fresh herbs, mozzarella cheese, garlic powder, salt, and pepper.
- Lay the chicken breasts flat and pound them to an even thickness.
- Spread the ricotta mixture evenly over each chicken breast.
- Roll up the chicken breasts tightly and secure with toothpicks if necessary.
Cooking
- Heat olive oil in a skillet over medium heat and sear the chicken rolls on all sides until golden.
- Transfer the rolls to a baking dish and bake for 20-25 minutes or until the chicken is cooked through.
- Serve with a side of your favorite vegetables.
Notes
Use a meat mallet to pound the chicken evenly for even cooking. Consider different herbs for a unique twist. Don’t overstuff, and sprinkle parmesan on top for a crust. For a spicy kick, add red pepper flakes.
