  • 1 pound Potato Gnocchi (fresh for better texture) Use fresh gnocchi for the best texture.
  • 2 tablespoons Butter
  • 1 tablespoon Olive Oil
  • 3 cloves Garlic (minced) Don't let it burn.
  • 1 cup Heavy Cream Use more for extra creaminess.
  • 1/2 cup Parmesan Cheese (grated) For a vegan version, substitute with nutritional yeast.
  • 1 teaspoon Rosemary (chopped) Fresh is preferred.
  • 1 teaspoon Parsley (chopped) Garnish for serving.
  • Salt and Pepper (to taste)
  • Red Pepper Flakes (optional for heat) For those who like a kick.

Preparation
  1. In a large pot of salted boiling water, add the gnocchi. Once they float to the top, they’re done! Usually takes about 2-3 minutes. Drain and set aside.
  2. In a large pan over medium heat, melt the butter and olive oil. Add the minced garlic and sauté until fragrant.
  3. Pour in the heavy cream and let it simmer gently.
  4. Stir in the Parmesan cheese until it’s a smooth, creamy consistency.
  5. Toss in the cooked gnocchi, rosemary, parsley, salt, and pepper. Mix well to coat.
  6. Dish it up immediately, and sprinkle with red pepper flakes if you’re feeling spicy!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat by adding a splash of cream or water.
