  • 8 ounces mushrooms, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced Toasted garlic adds extra flavor.
  • 2 cups beef broth Homemade broth recommended for richer flavor.
  • 1 tablespoon Worcestershire sauce Enhances flavor.
  • 1 teaspoon Dijon mustard
  • 1 cup sour cream Cream cheese can be used as a substitute.
  • 12 ounces egg noodles Cook according to package instructions.

Method
 

Preparation
  1. In a slow cooker, combine the beef, mushrooms, onion, garlic, beef broth, Worcestershire sauce, and Dijon mustard.
  2. Sprinkle with salt and pepper.
Cooking
  1. Cover and cook on low for 7-8 hours or high for 4-5 hours until the beef is tender.
  2. About 30 minutes before serving, cook your egg noodles according to package instructions.
  3. Once the beef is cooked, stir in the sour cream until well combined.
Serving
  1. Serve the beef stroganoff over the egg noodles and garnish with fresh parsley.

Notes

For a veggie boost, add spinach or carrots, or swap beef for chicken for a lighter dish. Add a splash of white wine for extra richness.
