- In a large pot over medium heat, cook the sausage until browned.
- Add the onion and garlic and sauté until softened.
- Stir in the chicken broth, diced tomatoes, and Italian seasoning. Bring to a boil, then reduce heat to a simmer.
- Add the tortellini and cook according to package instructions.
- Stir in the spinach or kale and cook until wilted.
- Season with salt and pepper to taste.
- Serve hot, topped with grated Parmesan cheese.
Notes
Store leftovers in the fridge for 3-4 days or freeze for up to three months. Reheat gently with a splash of broth.
