  • 3 cloves garlic, minced
  • 4 cups chicken broth Homemade broth can enhance flavor.
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups fresh tortellini Can use frozen tortellini with extra cooking time.
  • 2 cups spinach or kale Choose depending on mood; spinach wilts better.
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • for serving Grated Parmesan cheese Adds creaminess to the soup.

Method
 

Preparation
  1. In a large pot over medium heat, cook the sausage until browned.
  2. Add the onion and garlic and sauté until softened.
  3. Stir in the chicken broth, diced tomatoes, and Italian seasoning. Bring to a boil, then reduce heat to a simmer.
  4. Add the tortellini and cook according to package instructions.
  5. Stir in the spinach or kale and cook until wilted.
  6. Season with salt and pepper to taste.
  7. Serve hot, topped with grated Parmesan cheese.

Notes

Store leftovers in the fridge for 3-4 days or freeze for up to three months. Reheat gently with a splash of broth.
