Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1/2 cup breadcrumbs Toast for more flavor if desired.
  • 1/4 cup nutritional yeast Can be substituted with grated vegan cheese.
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • to taste Salt and pepper
  • 1 tablespoon olive oil (for baking) Brush over nuggets for a crispy finish.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mash the chickpeas with a fork or potato masher until mostly smooth.
  3. Add breadcrumbs, nutritional yeast, onion, garlic, cumin, paprika, salt, and pepper to the mashed chickpeas; mix until well combined.
  4. Form the mixture into small nugget shapes and place them on a baking sheet lined with parchment paper.
  5. Brush the tops with olive oil.
Cooking
  1. Bake for 20-25 minutes, flipping halfway through, until golden brown.
  2. Serve warm with your favorite dipping sauce.

Notes

Store the nuggets in an airtight container in the fridge for 3-4 days, or freeze for up to 2 months. Reheat in the oven or air fryer for maximum crispiness.
