  • 2 cups rolled oats Use instant oats if rolled oats are not available.
  • 1 tsp baking powder
  • 1 tsp ground cinnamon Can add nutmeg for a twist.
  • ½ tsp salt
Wet Ingredients
  • 1.5 cups apples, peeled and chopped Adjust sweetness based on apple variety.
  • ½ cup unsweetened applesauce
  • ½ cup honey or maple syrup Adjust based on apple sweetness.
  • ¼ cup coconut oil, melted
  • 2 eggs For a vegan version, use flax eggs.
  • 1 tsp vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a cake pan.
  2. In a large bowl, mix together the rolled oats, baking powder, ground cinnamon, and salt.
  3. In another bowl, combine the chopped apples, applesauce, honey or maple syrup, melted coconut oil, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until combined.
  5. Fold in the chopped apples until evenly distributed.
Baking
  1. Pour the mixture into the prepared cake pan and spread evenly.
  2. Bake for 25–30 minutes or until a toothpick comes out clean.
  3. Allow to cool before slicing and serving.

Notes

Store the cake in the fridge for about a week, or freeze for up to three months. Reheat a slice in the microwave for 15-20 seconds for a fresh taste.
