Ingredients
  

Dry Ingredients
  • 1 cup oats Use rolled oats for best results.
  • 1/2 cup mixed dried fruits (raisins, cranberries, etc.) Feel free to choose your favorite dried fruits.
  • 1/2 cup assorted nuts (almonds, walnuts, etc.) Customize with whatever nuts you have on hand.
  • 1/2 cup assorted seeds (pumpkin seeds, sunflower seeds, etc.) Mix and match seeds as preferred.
  • 1/4 cup honey or maple syrup (optional) Add for sweetness if desired.
  • 1/2 teaspoon vanilla extract Enhances the flavor.
  • 1 pinch salt A pinch to balance the sweetness.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine oats, dried fruits, nuts, and seeds.
  3. If using, add honey or maple syrup, vanilla extract, and a pinch of salt. Mix until well combined.
  4. Scoop tablespoon-sized amounts of the mixture onto the prepared baking sheet, flattening them slightly.
Baking
  1. Bake for 15-20 minutes or until the edges are golden.
  2. Allow cookies to cool completely before transferring them to an airtight container.

Notes

For serving, drizzle with honey or sprinkle sea salt on top. These cookies can be stored in an airtight container for up to a week at room temperature or longer in the fridge or freezer.
