  • 1 lb chicken breast
  • 4 cloves garlic, minced
  • 2 count lemons (juice and zest)
  • 1 cup cherry tomatoes, halved
  • 1 cup broccoli florets
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Method
 

Preparation
  1. Start by marinating the chicken with olive oil, minced garlic, lemon juice, zest, and seasoning. Let that soak in for at least 15 minutes.
  2. Preheat your pan over medium heat. Once hot, add the marinated chicken and cook until golden brown on both sides (about 7-8 minutes).
  3. Toss in the broccoli and cherry tomatoes. Squeeze in more lemon juice and cover to steam for another 5 minutes.
  4. Serve hot, garnished with fresh parsley.

Notes

These bowls keep well in the fridge for up to 4 days. For longer storage, freeze in airtight containers for about a month. Reheat in the microwave before serving.
