Healthy Cookie Dough Bark

Ingredients
  

For the bark
  • 1.5 cups almond flour
  • 1/4 cup cashew butter (or peanut butter) Substitutions can be made
  • 1/4 cup maple syrup Adjust sweetness to taste
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup chocolate chips For mixing into the dough
  • 1 cup chocolate chips (for drizzling)
  • 1 tsp coconut oil (for melting)
  • Flaky sea salt (optional, but highly recommended!)

Method
 

Preparation
  1. In a large bowl, combine almond flour, cashew butter, maple syrup, melted coconut oil, vanilla, and salt.
  2. Mix until everything is evenly combined.
  3. Stir in 1/4 cup of chocolate chips.
  4. Line a cutting board or plate with parchment paper.
  5. Transfer the cookie dough mixture to the parchment paper.
  6. Using a silicone spatula or your clean hands, firmly press the dough flat to about 1/2-inch thick. Set aside.
Chocolate Drizzle
  1. In a small bowl, mix 1 cup of chocolate chips with 1 tsp of coconut oil.
  2. Microwave in 30-second intervals, stirring in between, until melted.
  3. Pour and spread the melted chocolate over the cookie dough.
  4. Optional: Sprinkle flaky sea salt on top!
Setting
  1. Chill in the freezer for 10 minutes to set.
  2. Finally, chop it into large chunks and enjoy!

Notes

Let it chill long enough so it holds together when you cut it. Adjust the maple syrup according to your taste. Try different nut butters for variations.
