Ingredients
  

For the bowl
  • 2 pieces chicken breasts Boneless, skinless
  • 2 pieces sweet potatoes, diced
  • 1 cup rice (brown or white)
  • 1 tablespoon olive oil
  • to taste Salt
  • to taste pepper
  • Optional spices (like paprika, garlic powder, or cumin)
  • Fresh greens (like spinach or kale) for serving

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced sweet potatoes with olive oil, salt, pepper, and any desired spices. Spread them on a baking sheet and roast for 25-30 minutes or until tender.
  3. While the sweet potatoes are roasting, cook the rice according to package instructions.
  4. Season the chicken breasts with salt, pepper, and any optional spices.
Cooking
  1. In a skillet over medium heat, cook the chicken for 6-7 minutes on each side, or until cooked through and no longer pink in the center.
Assembly
  1. Once everything is cooked, assemble the bowls by placing rice at the bottom, topped with roasted sweet potatoes, sliced chicken, and fresh greens. Serve warm and enjoy!

Notes

Cook sweet potatoes and chicken together on a baking sheet for even less cleanup! For extra protein, consider adding black beans, or make it vegan by swapping the chicken for grilled tofu.
